Kai Bent-Lee serves up unique, refreshing cocktails

What is better than being treated to an amazing meal by one of Canada’s top chefs?

Enjoying a cold, bubbly drink mixed by his bartender son.

Recently, Susur Lee, the creative chef of Iron Chef America fame, and his mixologist son, Kai Bent-Lee paired up with Sodastream Canada to create a friendly weekend lunch for a group of journalists.

While Victoria gave you the details of the delicious meal, I couldn’t help but share some of the inspiring carbonated cocktails Kai Bent-Lee created for each course.

The imagination and attention to aroma, the blend of flavours and visual appeal of his cocktails made them the perfect complement to an amazing meal.

Served with a black pepper charred tuna and a spicy tartar, the basil yuzu mojito was refreshing.

Bent-Lee mixed  yuzu juice and zest, with homemade lime cordial, Soda Stream mojito soda, Bacardi white rum delicately muddled with large sprigs of mint and basil.

The yuzu, which is a main element in Kai’s cocktails at Bent, added a strong citrus aroma that mixed well with the mint and basil.

Next up was a twist on a classic gin and tonic served with a coffee marinated pork tenderloin.

As someone who is not a fan of tonic water, the cucumber infusion gave the classic cocktail a clean, almost melon-like flavour without the sweetness.

Kai used a cucumber infused Bombay sapphire, thyme, lime, and a beautiful swirl of thin, gin soaked cucumber in the glass.

He topped it off with the Soda Stream tonic water syrup which made for a light, bitter and refreshing drink to complement the spice-filled second course.

My favourite drink of the meal was a ginger tarragon lemonade served with a warm banana chocolate cake. I couldn’t get enough of this sweet boozy number. As a huge fan of homemade lemonade and ginger, this vodka cocktail balanced the flavours by adding a sweet and earthy chamomile syrup before topping it off with Soda Stream lemon lime soda.

This is a recipe I will definitely try to recreate at home.
