Beef stroganoff, it’s what’s for dinner

- January 31st, 2010

I dunno, maybe it’s the codeine-fortified pain medication I’ve been taking for the past five days since having my wisdom teeth acrimoniously yankee-doodle-dandied from my mandible. But I suddenly have an overwhelming desire to play an impromptu round of Jeopardy.

Since this is my blog, I’ll take nutrition for $1,000, Alex.

The question, cleverly crafted as an answer, is: In my kitchen.

Hit the imaginary buzzer if you know the answer, er, question. … Do do do do, do do do, do do do do, do, do do do … Time’s up.

The correct answer, posed in the form of a question, is: Where’s the beef?

Ah yes, that age-old question.

And nope, I’m not talking about my trainer Adam Dawe and I. Although I could be.

I’m referring to the delicious beef stroganoff we cooked up for a segment of Celebrity Chefs awhile back on Citytv.chefs

It’s 455 calories of savoury, sauteed goodness — and really easy to make.

Although the only beef I get to devour for the next couple weeks is whipped up in a blender, allow me to share my nutritionist-approved recipe for a batch of guilt-free beef stroganoff.

Ingredients:

• 2 cups mushrooms

• 1/2 cup onions

• 4 oz. beef, lean cuts

• 1/2 cup yogurt, plain, low fat

• 3 cups beans, green or yellow

• 1 2/3 tsp. olive or monounsaturated oil

Preparation:

• Slice the beef and saute with the veggies.

• Mix in the yogurt when done.

• Season with rosemary.

• Serve hot.

Mmmm, protein. It does the body good.

Try this version of beef stroganoff, and you don’t have to worry about putting your diet in, ahem, jeopardy.
