I want to give a big thanks to the Canadian Tourism Commission and Prince Edward Island for a fantastic 2013 GoMedia conference!
I toured the Prince Edward Island National Park, Cavendish and Green Gables areas of PEI with Parks Canada over the past week and also learned what is new and upcoming in Canadian travel at the media marketplaces.
I was also treated to a lot of yummy food along the way – all using the freshest local ingredients. Oh, and the seafood! I have never had so many oysters or eaten fresher lobster.
One of the best meals I had was eaten beachside in PEI National Park and was created by local chef Robert Pendergast of Youngfolk & The Kettle Black in Charlottetown. Huge meat pies, warming soup with oyster butter and a rich bread pudding were the perfect way to recharge after a morning building sandcastles on Brackley Beach.
Find Chef Pendergast’s recipe for bread pudding below and check out the recap of my week here.
